Palafel's Resistance Hummus Recipe

Ingredients:

  • 1 can of chickpeas, drained and rinsed

  • 1/4 cup of tahini

  • 2 tbsp of lemon juice

  • 2 tbsp plain yogurt

  • 2 tbsp EVOO

  • Salt, to taste

  • 4 ice cubes (for creamy consistency)

  • Olive oil, for drizzling

  • Sumac, for garnish

  • Optional: Fresh parsley, chopped, for garnish

  • Optional: 2 cloves of garlic, minced

Instructions:

  1. In a food processor, combine the chickpeas, tahini, lemon juice, yogurt,EVOO and salt.

  2. Blend the mixture until smooth and creamy, scraping down the sides as needed. Pro tip—for a creamier consistency you can add additional tahini or yogurt

  3. If the hummus is too thick, you can add some water or ice, a tablespoon at a time, until you reach your desired consistency. if it’s too thin you need more chikpeas

  4. Taste and adjust the seasoning as needed, adding more salt or lemon juice.

  5. To serve, transfer the hummus to a bowl, drizzle with olive oil, sprinkle with sumac, and garnish with chopped parsley.

  6. Enjoy with pita bread, veggies, or use as a delicious spread.
