M’jADARA (RICE & LENTILS)
Palafel’s M’jadara Recipe
Ingredients:
1 cup brown lentils
1 cup basmati rice
1 large onion, thinly sliced
1/4 cup olive oil
4 boullion cubes (3 if you want less salty)
Optional: 1 teaspoon cumin
Instructions:
Rinse the lentils, then place them in a pot with 4 cups of water. Bring to a boil, then reduce the heat and simmer until the lentils are cooked but not mushy. This usually takes about 20 minutes
In a separate pot, boil 2c water with 1tbsp EVOO
Strain lentils and mix in with the uncooked rice in a bowl.
Place the lentil/rice mixture in the pot with the boiling water and cook until the rice is done.
In a large skillet, heat the remaining olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and crispy. This usually takes about 20 minutes.
Once the lentils and rice are cooked, mix them together in a large bowl. Add the cumin if you want a little extra flavor
Serve the mujadara topped with the caramelized onions. Enjoy this delicious and comforting Palestinian dish!
